Fermented black beans are crushed into bean curd, which is then made into an easy-to-handle paste. The large bean curd grains remain in the bean paste, so the rich flavour of the bean curd can be tasted. Use in stir-fried, steamed and stewed dishes, as well as for masking ingredients. It is a mandatory ingredient for many Asian dishes.
