Yamagata's most representative fruit is the cherry and the prefecture is the largest producer of cherries in Japan, accounting for about 75% of the nation's total cherry production.

Sato Nishiki of Higashine City, Yamagata Prefecture, crossed "Koyatama" with "Napoleon" in the first year of the Taisho era (1912), and after 10 years of hard work he cultivated and popularized "Sato Nishiki" cherries.
