Soba a traditional Japanese noodles since the Edo period and are served cold or hot.
In Japan you will find hundreds of Soba from cheap until expensive. Besides the maker, it mostly depends on how much buckwheat is used to produce the Soba. By law, there has to be a minimum of 30% buckwheat in the product to be called Soba, but the rest can be usual wheat. In most cases, companies even don't write the amount of buckwheat used as not to show that they only use 30% and therefore distract customers.
This high quality Soba are made of 80% buckwheat which makes a completely different taste to the cheap ones you might have already eaten.
