Natural brewed soy sauce made with natural temperature changes.
Unlike most soy sauces, which take about six months to ferment and mature, our local soy sauce is naturally brewed and matured for a full year using only the natural seasonal temperature changes.
The time taken to mature the soy sauce gives it a mellow taste and a natural, gentle sweetness. It is a vintage soy sauce like wine, whose flavour changes every year depending on the climate and the quality of the soybeans and wheat.
This soy sauce is brewed by Niigata's nature and people, using Niigata's raw materials, harvested together with Niigata's people in Niigata's climate and brewed together with Niigata's people.
